How To Use Edible Sparkles On Chocolate

There are a few simple ways to make your chocolate creations as radiant as jewels. The first thing to remember is that a small amount of edible glitter goes a long way. No need to be heavy handed”edible glitter is very fine, and so a complete layer over your chocolate can be achieved quicker than you think. Next, never mix your edible glitter with water when you’re applying it to chocolate. Water will make your chocolate grainy, not the desired smooth texture. If you are looking to create a sparkly paste to apply with a candy paint brush use a clear alcohol to wet the edible glitter, like gin. The amount of alcohol you add depends on whether you want a thinner layer (more alcohol) or thicker layer (less alcohol) of glitter on your chocolate. If you are pouring your own chocolates, you can sprinkle your edible glitter in the desired spots of your mold (or the entire chocolate for a “jewel” effect) before pouring the chocolate. Finally, you can dust your chocolates with edible glitter, basically treating the glitter like sprinkles. If it isn’t sticking, dab a very small amount of clear alcohol over the chocolate, just enough to give it a sheen and something for your glitter to hold on to. Edible gold leaf or silver leaf can also be purchased and applied to your chocolate with great care. This stuff has a penchant for sticking to skin, so you will want to avoid touching it as much as possible. To apply to chocolate, lay the leaf over the chocolate in question and very gently smooth it over the contours with a candy paint brush.
